Carnitas Crunchwrap

If I couldn’t just leave well enough alone I just had to tinker with tacos bells crunch wrap supreme. Let me explain other than the obvious fact that I like to mess with things. Sometimes I just really enjoy knowing whats in my food. Its just an unrealistic expectation to need to be wasted to enjoy taco bell ( I know I lost some of you all here) when you can make it at home and put the things you like and enjoy . For this I opted for carnitas because they are tender and juicy and the perfect meat for this. I also chose Oaxaca cheese because its stringy, creamy and mild enough to let the meat shine. A quick tip: If you finish with cheese at the crease when it cooks the cheese will seal the gap at the top.

Ingredients

  • 1Tb salt
  • 1Tb Black Pepper
  • 1Tb Garlic Powder
  • 3-4lb Pork Tenderloin
  • Pork Marinade
  • 1lime
  • 3 Cloves Garlic, smashed
  • 1tsp black pepper
  • 1.5c Orange Juice
  • 1Tb cilantro
  • Avocado Sour Cream
  • 2 Avocado
  • 1/2c Sour Cream
  • 1Tb cilantro
  • 1tsp salt
  • 1 lime
  • 1c Shredded lettuce
  • 1 jalapeno, thinly sliced (optional)
  • 1 roma tomato, diced
  • 1c Cheddar cheese, shredded
  • 2c Oaxaca cheese,shredded
  • 8 Jumbo burrito tortillas
  • 8 tostada shells

Directions

  • To make marinade for pork combine lime, garlic salt, pepper, orange juice and cilantro in a plastic bag. Add in Pork tenderloin and let marinade overnight.
  • Once ready to use pork Remove from marinade. Reserve about a cup to bake with pork and coat pork generously with 1Tb salt, pepper and garlic powder. Roast at 400 covered for 1hour and 30 minutes. Roast Uncovered for 30 minutes after. Pork should be able to shred easily.
  • To make avocado sour cream combine avocados, sour cream, cilantro, tsp salt, and lime. Chill till ready to use.
  • Once pork is cooled place jumbo tortilla on surface add in tomatoes, lettuce, jalapenos, and some cheese in center of tortilla.
  • Coat both sides of tostado shell with avocado sour cream and place onto of everything. Top the tostado with cheese and pork.
  • Do not overfill crunch wrap.
  • Wrap the tortilla around crunchwrap in four folds and place folded seam side down till ready to cook. In a hot greased pan place seem side down to keep from opening. Flip after 2 minutes and cook for another 2 till both sides are golden brown.
