Spinach Pepperoncini Dip

Spinach pepperoncini dip. in my head I wanted spinach artichoke dip but said ill check to see if we have artichoke hearts (which I know we did) . im on my way to the store then I think crap! I forgot to physically check to see if I have artichokes then I remember how sure I am that we in fact have artichokes. I get to the store do my list shopping and do my other shopping which consists of something unplanned that just draws my interest and I know it shouldn’t but will definitely end up in the cart. On the drive home I think crap! I forgot to even look for artichoke hearts to potentially buy had I happened to stumble upon them. I get home, get my trusty flashlight out and scour the pantry. No artichoke hearts. I see pepperoncini’s and pass them by. Four minutes later.. pepperoncini’s it is. After all that. Now introducing the best dip in the world (In my opinion, let me know below)

Ingredients

  • 2 bunches spinach
  • 1 leek, chopped
  • 1tsp salt
  • 1tsp black pepper
  • 1/2 cup cream cheese
  • 1 cup mayonnaise
  • 1/4 cup grated parmesan
  • 2 garlic cloves
  • 11oz stemmed and drained
  • 1Tb butter
  • 1Tb red pepper flakes

Directions

  • In a preheat pan at medium- high heat add in butter and leeks cook for two- three minutes till brown add in a pinch of salt and red pepper flakes
  • Add in spinach and garlic cover and let steam for 10 minutes till tender and most liquid has dissipated
  • In a food processor combine cream cheese, mayo spinach mixture black pepper another tsp of salt and blend till smooth.
  • Serve as dip or spread. However you want to enjoy it.
