Spiced Applesauce Cake

Oh the art of baking. Baking isn’t something I preplan for me it’s a mood. I wasn’t naturally drawn to baking as I was cooking. In fact I hated it. I really didn’t come into my own with baking until after years of forceful practice, a lot (and I mean a lot) of patience, and just time. Now for the most part I really enjoy it and can see why so many others do. It’s just makes you happy and who can resist a warm, sweet smelling house because of it.

Now even with practice and time, mistakes were made with this cake. I got distracted for one minute and totally forgot my baking powder and baking soda. Which wouldn’t have been an issue had it not already been in the oven for 15 minutes when I initially realized my mistake. So I had to pull the cake out and bin it. But like I mentioned before baking is a mood right and I was in that mood. So I cheerfully (not really ) started over and the results were totally worth it.

Spiced applesauce cake is something I make a lot of in the winter and fall. Its a great breakfast cake or after dinner treat. I like to enjoy mines with a hot cup of coffee and a cool afternoon.

Now applesauce cake is nothing new but it comes a lot of different ways. Some like dried fruit in it while others like nuts. Some like both! For me I prefer it plain. This recipe can be easily adapted to accommodate fruits and nuts as well. Give it a try I’m sure you’ll love it.

Ingredients

  • 1/2c butter (1stick, soften)
  • 1 1/4c applesauce
  • 2c flour
  • 2tsp baking powder
  • 1/2tsp baking powder
  • 1Tb cinnamon
  • 1/4tsp allspice
  • 1/4tsp salt
  • 2 eggs
  • 1Tb vanilla
  • 2c brown sugar
  • 1/4tsp ground ginger
  • FROSTING
  • 2 blocks cream cheese, softened
  • 1c powdered sugar
  • 1/4c butter. Softened
  • 1tsp vanilla

Directions

  • Cream butter with brown sugar for 1 minutes till incorporated
  • Add in both eggs, ginger, allspice, cinnamon and salt. Beat for 2 minutes till mixture is pale in color.
  • Stir in applesauce. Add in flour, baking soda, and baking powder.
  • Mix only till completely incorporated. Put in a heavily greased cake pan and bake at 350 for 40 minutes. Bake till a toothpick comes clean out of the middle.
  • To make the frosting whip soften cream cheese, butter, sugar, and vanilla. Till fluffy. Refrigerate till you need to use it.
  • Let cake cool completely and frost with cream cheese frosting. Enjoy on the porch with coffee!
