Buffalo Chicken Pizza

Fun Fact! Buffalo chicken pizza was one of the first things I was allowed to solo cook as a kid. I first saw buffalo chicken pizza on the Food Network and was like this is revolutionary. When I was a kid I used to cook the chicken up, cut it into huge undesirable pieces take a boboli premade crust and have at it. I also used to make my own buffalo sauce, which consisted of hot sauce, butter, sugar, and cornstarch. So it was a half thick, half separated, Slightly chunky from clumped cornstarch and a pronounced flavor of sugar. Oh man, I still get shivers thinking about my first time cooking certain things. Now, I’ve come a long way from those days but buffalo chicken pizza is still one of my favorites. This time I make my own crust and cut my chicken realistically, leave the buffalo sauce to the experts and buy better quality blue cheese that i use sparingly! I love making this pizza because it really just easy as long as you have some dough and it doesn’t even have to be homemade. This recipe can be made with leftover chicken, dunk it in some buffalo sauce, Top with cheese and dinner will be served in 15! Try it out and let me know what you think.

Ingredients

  • 3/4c buffalo sauce
  • 2c mozzarella cheese
  • 2chicken breast
  • 3 green onions, sliced
  • 1Tb parsley, chopped
  • 1/4c blue cheese crumbles
  • 6 basil leaves, Thinly cut
  • CRUST
  • 300g flour
  • 10g dry yeast
  • 10g salt
  • 5g sugar
  • 150g water
  • 10g olive oil
  • Chicken Rub
  • 1tsp celery seed
  • 1.5Tb salt
  • 1Tb black pepper
  • 1Tb garlic powder
  • 1tsp onion powder
  • 1Tb dried thyme
  • 1Tb oregano

Directions

  • To make crust start by heating water between 100-110 degrees never exceeding 130 degrees ( yeast die) and no less than 100 degrees ( so it can germinate)
  • Add yeast and sugar to water and let sit from 5-10 minutes so that yeast blooms.
  • With flour in a bowl add in salt and move around to incorporate. Form a well in the middle of flour and add in yeast to the middle. Once incorporated add in olive oil and knew dough by hand for 10 minutes If you’re using a stand mixer only knead for 8 minutes.
  • Once complete form dough into ball place in glass dish and cover with damp cloth. Set in or near a warm oven and let rest for 30 minutes to a hour. In the meantime make rub and cook chicken.
  • To make rub combine all ingredients.
  • Coat chicken with rub (you won’t be using it all). Preheat a pan over medium heat and sear on both sides for 6-8 minutes depending on size of chicken Till cooked throughout.
  • Let cook and cube chicken in bite size cube. Toss with enough sauce to coat chicken.
  • Roll out dough to get start, then switch to using your hands to stretch the dough. You should be able to see light through dough so you know its ready. Dust baking sheet or preheat pizza stone with semolina flour ( you can use corn meal in a pinch). Spread dough across the pan .
  • Add a even layer of buffalo sauce to dough. Add on cubed chicken, top with cheese and more chicken. Top with fresh basil and bake at 400 for 16 -18 minutes.
  • Once out of the oven top with chopped parsley and green onions. Serve hot and enjoy!
