Did you know that scampi actually refers to the shellfish itself and not the sauce its cooked in. I didn’t, I always figured scampi referred to the garlic butter sauce the shrimp is in since its basically saying shrimp, shrimp. Well its not really, scampi is a type of crustacean, a langoustine to be exact, it and the dish originated in Italy. Now scampi the traditional Italian way is just in reference to the langoustine so it can have any kind of ingredients paired with it. The modern Italian- America way most of us are used to is referring to it in a garlic butter sauce. And yes when you hear people say they “scampied” the shrimp used as a verb that is absolutely not a thing. Although with this discovery it is a tad bit amazing that means scampi can have anything with it and still technically be considered correct. Today for this dish I kept it classic butter, parsley, garlic. There really isn’t need for anything more. Especially for a quick weekday meal. Try it out and let me know what you think!
Ingredients
- 3-4oz Cod Filets
- 5Tb unsalted butter
- 2Tb olive oil
- 8 cloves garlic,minced
- Salt
- Pepper
- 1/4c parsley
- 1 lemon, segmented
Directions
- In a medium high pan pour in olive oil followed by butter.
- Season cod generously with salt and pepper.
- Sear on one side for 3 minutes. Flip cod. Then add garlic cloves and 1/4tsp salt on them.
- Move garlic around and cook fish for 3 more minutes.
- Top with parsley. Serve with lemon wedges and enjoy.
- For a side try Roasted Garlic Potatoes or some Fideo Pasta!
