Chicken and Waffles w/ Hot-Coffee Maple Syrup

Crispy fried chicken wings served over fluffy waffles drizzled with a sweet and spicy hot- coffee maple syrup.

Chicken and waffles is always a treat around here. It’s pretty much the ultimate brunch item. It’s will always be a southern favorite. Chicken and waffles usually consist of the wings of the chicken battered and fried. A crisp but fluffy waffle and a drizzle of syrup, butter and a shake of hot sauce or hot vinegar. Since its brunch a cocktail is usually not far behind. For this recipe I decided to keep everything pretty standard and traditional but raise the stakes with a hot-coffee and maple syrup. Which is all our normal favorites of hot sauce, coffee and maple syrup all rolled into one. Check out my tips and tricks below for the best chicken and waffles. TIPS AND TRICKS FOR THE BEST CHICKEN AND WAFFLES:

don’t get overwhelmed: its easy to get overwhelmed doing multiple things in once but the majority of this can be done ahead of time and the food really benefits from it. if you do your pancake batter ahead of time the “rest” you give it after mixing will leave you a fluffier waffle. Season your chicken ahead of time in a plastic bag then in the morning toss in the flour, shake it up and you’re ready to go. Less dishes that way too!

rest your batter: whether you’re making your waffle batter the night before or the moment of. make sure to let it rest a minimum of 15 minutes just to give your batter some time to relax.

set your chicken: Once you toss your chicken in the seasoned flour let it sit on a baking rack so that the crust has a moment to set and dry out a bit. aim for about 20 minutes.

don’t forget your cooking spray: forgetting to spray down the waffle iron is super common! It is something that if you forget to do it can really throw off the timing of everything else since you still have to wait for it to cook to even begin to rip it out. So don’t forget to protect your waffle. If you’ve properly greased your waffle iron and you still cant remove your waffle no worries just let it cook a little longer and it’ll pop right out!

INGREDIENTS

WAFFLE BATTER

  • 1/2c milk
  • 2c All purpose flour
  • 3.5tsp baking powder
  • 1tsp salt
  • 3 Tb sugar
  • 2 eggs
  • 4Tb butter, melted
  • 1Tb vanilla
  • 1Tb corn starch

FRIED CHICKEN

  • 1 lb Chicken Wings, segmented
  • 1 c Buttermilk
  • 1 Egg
  • 2 Tb Cayenne Pepper
  • 2 Tb Black Pepper
  • 2 Tb Garlic Powder
  • 1 Tb Seasoned Salt
  • 1 Tb Onion Powder
  • 1.5 c Flour, all purpose
  • 1/4 c Corn Starch

HOT COFFEE MAPLE SYRUP

  • 1c Black Coffee
  • 1/4c Maple Syrup
  • 1/4c Hot Sauce
  • 1/2 tsp Salt
  • 1 tsp Vanilla

DIRECTIONS

MAKE WAFFLE BATTER: Separate the wet (eggs, butter, milk, vanilla) and dry ingredients ( flour, salt, sugar, baking soda, starch). Add the wet to the dry ingredients and incorporate till combined. Lumps are okay. Let sit for 15-20 minutes.

MARINADE CHICKEN: Try and marinade this ahead of time. Combine 1Tb each of cayenne, black pepper, garlic powder, seasoning salt and onion powder. Reserve the other remaining tablespoon for the flour and cornstarch mix. Combine buttermilk and eggs with the seasoned chicken and let sit for 30 minutes to overnight.

DREDGE CHICKEN: Combine flour and cornstarch along with remaining tablespoon cayenne, black pepper, and garlic powder. Toss chicken thoroughly and let sit for 15 minutes.

PREHEAT OIL AND WAFFLE IRON:

MAKE SYRUP: To make syrup combine all ingredients and bring to a boil. Simmer till reduced by a fourth and cut the heat and cover till ready to serve.

FRY CHICKEN: Once the chicken heats 375 fry chicken till golden brown and floating and the juices run clear. That should take about 10 minutes. Make chicken in batches for the crispiest skin.

COOK WAFFLES: Once waffle iron is preheated. Spray generously with non stick spray. Add batter to the middle of the waffle iron let cook on one side for 3 minutes and flip and let cook for another 3 minutes.

SERVE: Place the chicken over the waffles and drizzle generously with syrup and butter.
