Dark Chocolate and Cherry Muffins

Crispy and buttery muffins, loaded with sweet red cherries and bitter dark chocolate. Topped with a turbinado sugar shell.

I love muffins. I enjoy having them with coffee, especially on a nice cool day. They are perfect on their own or a great breakfast addition. The main thing about muffins I love is how quickly you can throw them together. Using literally anything you have on hand. You can fold in nuts, oats, dried or fresh fruit. You can even go savory with meats and cheeses! You can split them in half and spread on some softened butter or fry them in a little hot butter. You can either snack or make a whole meal out of them. Personally I enjoy the combination of chocolate and cherries. This recipe was inspired by my favorite Ben and Jerry’s flavor. The bitter chocolate and the super sweet cherries really work well off of each other. Check out my tips and tricks below for the best dark chocolate and cherry muffins. TIP & TRICKS FOR THE BEST DARK CHOCOLATE AND CHERRY MUFFINS:

try your cherries: maybe you cant find red cherries or you just prefer black. any color cherry will do just try them. so you know if you need to add a little extra sweetness because they are bitter. or they don’t need any extra help at all and they are sweet enough.

don’t sugar the cherries too soon: don’t sugar the cherries too soon. by sugaring them you’re giving them some extra sweetness. at the same time you’re also surfacing the moisture in them. too much extra juice can cause the batter to get heavy.

don’t forget to grease the pan: this one sometimes gets lost on all of us. we get so excited we just want to get the batter loaded and popped into the oven. i don’t know what’s worse, them getting stuck in the pan or on the liners. which ever one you choose make sure you spray every nook and cranny with baking spray.

make it a cake: if you don’t have muffin tins. this batter works well as a loaf or breakfast cake in a square pan. just make sure to grease the pan as stated above and add 15-20 more minutes. it should give off the same indicators as the muffins. Raised top, golden brown and a toothpick should be pulled clean.

INGREDIENTS

  • 2c AP Flour
  • 3/4c White Sugar
  • 2tsp Baking Powder
  • 2/3c Milk
  • 4Tb Butter
  • 2 Eggs ( 1Egg+ 1 White)
  • 1Tb Vanilla
  • 1/2tsp Salt, fine
  • 1c Cherries (+1Tb Sugar)
  • 3/4c Dark Chocolate
  • 1/4c Turbinado Sugar

DIRECTIONS

  • CREAM: Cream together your sugar till its grown in size and is a pale color. Add in butter and continue to beat.
  • COMBINE DRY: Combine your baking powder, salt and flour together in a separate bowl.
  • ADD WET: Add milk and vanilla to beaten sugar and egg.
  • COMBINE: Combine dry ingredients into wet mix. DO NOT OVERBEAT.
  • FOLD: Fold in dark chocolate and cherries.
  • FILL: Fill 1/4c of mix per muffin tin.
  • SPRINKLE: Sprinkle 1tsp of turbinado sugar onto each muffin.
  • BAKE: Bake at 375F for 20 minutes or until muffins are brown and a toothpick runs cleanly through.
