Bean and Egg Cups

Ingredients
  

  • 1 c Black beans cooked and mashed
  • 8 Eggs
  • 1 Green onion minced
  • 2 tb cheddar cheese
  • 1 tsp Salt
  • 1 tsp Pepper

Method
 

  1. Mash beans and green onion season with salt and pepper
  2. Whisk eggs, continue mix g and add cheese.
  3. Generously spray muffin tins, ladle a spoonful bake 350F for 20-25 minutes
  4. Fill muffin cups and bake until firm.
