Stewed Okra and Tomatoes
Classic stewed tomatoes slice with onions and garlic. Simmered in sweet crushed tomato sauce lightly spiced with crushed red pepper flakes and salt.

- 4 c Okra fresh, sliced
- 10 oz Crushed Fire Roasted Tomatoes canned
- 10 Cloves Garlic minced
- 1 tsp Crushed Red Pepper Flakes
- Salt
- Black Pepper
- 2 Tb Olive Oil
- 1 Yellow Onion Large
- 2 Tb White Vinegar
- 1 Tb Salt
Heat a sauce pan over medium high heat. Add in onions and brown for 3 minutes.
Slice okra and toss it in with salt and vinegar. Let it sit for 15 minutes then run it under cold water for about a minute.
Add the okra to the pan along with the minced garlic. Then add tomatoes and crushed red peppers. Simmer for 20 minutes. Season with the salt and pepper.
