Stewed Okra and Tomatoes

Classic stewed tomatoes slice with onions and garlic. Simmered in sweet crushed tomato sauce lightly spiced with crushed red pepper flakes and salt.

Ingredients
  

  • 4 c Okra fresh, sliced
  • 10 oz Crushed Fire Roasted Tomatoes canned
  • 10 Cloves Garlic minced
  • 1 tsp Crushed Red Pepper Flakes
  • Salt
  • Black Pepper
  • 2 Tb Olive Oil
  • 1 Yellow Onion Large
  • 2 Tb White Vinegar
  • 1 Tb Salt

Instructions
 

  • Heat a sauce pan over medium high heat. Add in onions and brown for 3 minutes.
  • Slice okra and toss it in with salt and vinegar. Let it sit for 15 minutes then run it under cold water for about a minute.
  • Add the okra to the pan along with the minced garlic. Then add tomatoes and crushed red peppers. Simmer for 20 minutes. Season with the salt and pepper.
