Stewed Chicken and Sausage

Tender chicken and rendered sausage stewed with roasted diced tomatoes, onions, peppers, celery and garlic.


  • 3 Chicken Breast large cubes
  • 3 c Sausage thick sliced
  • 1 Yellow Onion diced
  • 1 Poblano Pepper diced
  • 4 Green onions diced
  • 2 ribs Celery diced
  • 6 cloves Garlic minced
  • 3 Bay Leaves
  • 8 oz Fire roasted tomatoes canned
  • 6 c Water
  • 2 Tb Chicken Bouillon Powder
  • 1 Tb Gumbo File
  • Cayenne Pepper
  • Black Pepper
  • 1/4 c Flour
  • 1 Tb Worcestershire sauce


  • Season chicken generously with salt, pepper, garlic powder and cayenne.
  • Heat a dutch oven over medium high heat. Sear chicken till its browned on all sides. Cook for about 5 minutes. Remove from the pan.
  • Add in sausage. Once browned remove from the pan away from chicken.
  • Lower the heat and add in roux. Stirring continuously cook for 10 minutes till nice and brown. Season with chicken bouillon powder.
  • Add in peppers, onions, garlic, bay leaves and celery.Cook for 5 minutes. Season with salt and pepper.
  • Add in tomatoes, file, chicken, and water.
  • Simmer for 45 minutes to a hour till the chicken is tender. Season with cayenne. worcestershire sauce, pepper, garlic and salt.
  • Add in sausage and simmer for 15 minutes. While you prepare your rice.
