Season chicken generously with salt, pepper, garlic powder and cayenne.
Heat a dutch oven over medium high heat. Sear chicken till its browned on all sides. Cook for about 5 minutes. Remove from the pan.
Add in sausage. Once browned remove from the pan away from chicken.
Lower the heat and add in roux. Stirring continuously cook for 10 minutes till nice and brown. Season with chicken bouillon powder.
Add in peppers, onions, garlic, bay leaves and celery.Cook for 5 minutes. Season with salt and pepper.
Add in tomatoes, file, chicken, and water.
Simmer for 45 minutes to a hour till the chicken is tender. Season with cayenne. worcestershire sauce, pepper, garlic and salt.
Add in sausage and simmer for 15 minutes. While you prepare your rice.
