  • 1 cup oats
  • 1 banana peeled and sliced
  • 1/3 c turbinado sugar
  • 3/4 c walnuts
  • 1/3 c olive oil
  • 1 teaspoon cinnamon
  • 1 Tablespoon Vanilla extract

Method
 

  1. Preheat the oven to 300°F.
  2. Add the oats, banana, turbinado sugar, walnuts, and cinnamon to a food processor.
  3. Add the olive oil. vanilla and pulse until the walnuts and banana are broken down and the mixture comes together.
  4. Spread the mixture onto a prepared baking sheet, creating an even layer.
  5. Bake at 300°F for 40 to 45 minutes, or until the edges are golden brown.
  6. Remove from the oven and allow to cool for 30 minutes, or until cool to the touch.
  7. Break the cooled bark into pieces and serve.
