Barbecue Grilled Ribs

Simple and easy dalmatian coated salt and pepper rubbed ribs Grilled over charcoal and basted from a classic barbecue sauce.

Ingredients
  

  • 2 Pork Spare Ribs trimmed
  • 3 TB Sea Salt fine
  • 4 TB Ground Black Pepper fine or medium grind
  • Optional: Barbecue Sauce

Method
 

  1. Prepare your grill with charcoal.
  2. Remove the ribs from the refrigerator 30 minutes before cooking.
  3. Generously rub the ribs with salt and pepper.
  4. Once the charcoal has smoldered (no visible flame, and the coals are white), place the ribs curve-side down on the grill to form a crust.
  5. Cook for 20 minutes until a deep crust forms and the ribs easily pull away from the grill.
  6. Flip the ribs and cover the grill, leaving a one-inch gap in the vents.
  7. Continue cooking for 3-4 hours, or until the meat easily separates from the bone.
