Prepare the blackened shrimp
Combine the cayenne, black pepper, thyme, salt, garlic powder, and onion powder.
Sprinkle the blackened seasoning evenly over the cleaned and peeled shrimp.
Heat a skillet over medium-high heat with a small amount of olive oil.
Sear the shrimp for about 2 minutes on each side, or until cooked through.
Remove the shrimp from the pan and allow them to cool.
Prepare the peanuts
Add the peanuts to a dry sauté pan over medium heat.
Cook for about 5 minutes, stirring occasionally, until the natural oils begin to surface and the peanuts deepen slightly in color.
Remove from the pan and allow them to cool slightly.
Reduce the Coca Cola
Add the Coca Cola to the pan and bring it to a simmer.
Allow it to simmer for about 20 minutes, or until reduced to approximately 1/3 cup.
Watch the reduction toward the end because the concentrated Coca Cola can thicken quickly.
Make the peanut dipping sauce
Add the sautéed peanuts, reduced Coca Cola, water, yellow miso, soy sauce, cilantro, and green onion to a food processor.
Blend until smooth and creamy.
Add additional water a little at a time until the sauce reaches your desired dipping consistency.
Taste and adjust the consistency as needed.
Assemble the spring rolls
Slice each cooled shrimp in half lengthwise.
Fill a shallow dish with water.
Dip one spring roll wrapper into the water until softened and pliable. Place it on a clean work surface.
Arrange four shrimp halves on the wrapper with the seasoned side facing down.
Add the thinly sliced celery, cabbage, and spring mix.
Fold the edges of the wrapper inward over the filling.
Tuck the filling in as you roll, keeping the spring roll tight without tearing the wrapper.
Repeat with the remaining wrappers and filling.
Serve immediately with the Coca Cola peanut dipping sauce.
