Ingredients
  

  • 4 cups vanilla ice cream melted
  • 1.5-2 cups pancake mix such as Krusteaz Buttermilk Pancake mix
  • 1 tablespoon vanilla extract
  • 4 tablespoons butter

Method
 

  1. Whisk the melted ice cream until smooth.
  2. Stir in the vanilla extract and pancake mix until just combined.
  3. Heat a griddle over medium-low heat.
  4. Melt the butter on the griddle.
  5. Using an ice cream scoop, pour portions of batter onto the griddle, ensuring not to overcrowd the pan.
  6. Cook until the edges begin to brown and bubbles form, then flip and cook the other side.
