Chicken and Pepperoni Club

Tender thinly sliced chicken, thick cut pepperoni, pepperoncini peppers and red onions. Lathered with a Dijon pepperoncini spread.

Ingredients
  

  • 1 Baguette baked and cooled
  • 2 Chicken Breast
  • 10 slices Pepperoni thick cut
  • 1/2 c Red Onion thinly sliced
  • 1/4 c Pepperoncini Peppers large diced
  • 5 slices Colby Jack Cheese
Pepperoncini Dijon Dressing
  • 3 TB Pepperoncini brine
  • 3/4 c Mayo
  • 2 Tb Dijon Mustard
  • 1/2 tsp Crushed Red Pepper Flakes
  • 1 tsp Turmeric
  • 1 tsp Worcestershire sauce
  • 1/2 tsp Oregano dry

Method
 

  1. Thinly pound out chicken and season generously with salt and pepper.
  2. Add olive oil to a hot and pan sear chicken on both sides for 6 minutes till its cooked all the way through.
  3. Once chicken is cooked let it slightly cool.
  4. Slice baguette in half but not all the way through.
  5. Make sauce by combining all ingredients listed under pepperoncini Dijon.
  6. Build sandwich by placing pepperoni at the bottom. Followed by chicken, red onions and pepperoncini. Make sure to lather on dijon dressing.
