Chicken Meatball Subs

Golden, garlicky, and just the right amount of heat — these chicken meatball subs hit that sweet spot between cozy and craveable. They’re juicy, buttery, and built for weeknights when you want big flavor without much fuss.

Ingredients
  

  • 1 lb ground chicken
  • 6 garlic cloves minced
  • ½ cup torn bread
  • 1 Tbsp garlic powder
  • 1 egg
  • 2 Tbsp butter
  • 1 Tbsp olive oil
  • 1 Tbsp salt
  • 1 Tbsp black pepper
  • 2 tsp crushed red pepper flakes
  • 5 fresh basil leaves chopped
  • 1 cup marinara sauce
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • 2 cups mozzarella cheese

Method
 

  1. Prepare Meatballs: In a bowl, gently combine the ground chicken, minced garlic, torn bread, egg, salt, black pepper, garlic powder, and crushed red pepper flakes. Form the mixture into meatballs or patties.
  2. Sear Meatballs: Heat the butter and olive oil in a skillet over medium-high heat. Sear the meatballs until they are golden brown on all sides.
  3. Bake Meatballs: Transfer the seared meatballs to a baking dish and bake in a preheated 350°F oven for 20 minutes.
  4. Assemble Subs: Slice the hoagie rolls lengthwise. Place a slice of provolone cheese on the bottom half of each roll. Top with the cooked meatballs, marinara sauce, and mozzarella cheese.
  5. Finish Subs: Bake the assembled subs until the cheese is melted and golden brown, and the rolls are crispy. Garnish with freshly torn basil before serving.
