Chicken Pesto Quesadilla

Crispy tortillas stuffed with melty cheese, pesto-coated chicken, and bold flavor in every bite. Great for quick dinners or party appetizers.
Servings: 2

Ingredients
  

  • 2 Tb Butter
  • 2 cups shredded chicken
  • ½ cup jalapeño spinach pesto
  • cups shredded mozzarella
  • 1 cup shredded pepper jack
  • 4 large flour tortillas
  • Olive oil spray or butter

Method
 

  1. Combine chicken and pesto.
  2. Heat a skillet over medium heat. Add in pat of butter. Place a tortilla in the skillet.
  3. Sprinkle cheese on one half of the tortilla, then top with the chicken mixture. Fold the tortilla in half.
  4. Cook for 2–3 minutes per side, or until golden brown and the cheese is melted.
  5. Slice and serve. Repeat the process starting with the butter as you build more quesadillas.
