Method
- Combine chicken and pesto.
- Heat a skillet over medium heat. Add in pat of butter. Place a tortilla in the skillet.
- Sprinkle cheese on one half of the tortilla, then top with the chicken mixture. Fold the tortilla in half.
- Cook for 2–3 minutes per side, or until golden brown and the cheese is melted.
- Slice and serve. Repeat the process starting with the butter as you build more quesadillas.
