Crawfish and Veggie Power Bowl

This crawfish and slaw power bowl is a fresh, flavorful mix that balances comfort with clean eating. Grated Brussels sprouts, crisp broccoli, creamy white beans, and sweet corn create a hearty veggie base.

Ingredients
  

  • For the Crawfish:
  • 1 cup crawfish tails
  • Salt to taste
  • Black pepper to taste
  • Garlic to taste
  • 1 tablespoon butter
  • 2 tablespoons white bean vinaigrette
  • For the Slaw:
  • 2 Brussels sprouts thinly sliced or shredded
  • 1 broccoli crown finely chopped
  • ½ Piece Celery sliced
  • 1 Sweet Red Pepper sliced
  • 1/2 cup corn fresh or frozen, thawed
  • 1/2 cup cooked white beans
  • 2 Tb Cilantro minced
  • 1/4 cup white bean vinaigrette
  • Salt to taste
  • Black pepper to taste

Method
 

  1. . Prepare the Crawfish:
  2. Heat a pan over medium heat. Add butter and sauté the crawfish tails. Season with a pinch of salt and pepper. Once cooked, stir in the 2 tablespoons of white bean vinaigrette.
  3. Make the Slaw:
  4. In a medium bowl, combine the shredded Brussels sprouts, peppers, cilantro,chopped broccoli, corn, and white beans. Pour the 1/4 cup of white bean vinaigrette over the slaw ingredients and toss to combine. Season with salt and pepper to taste. Let the slaw sit for at least 15 minutes to allow the flavors to meld.

  6. Serve the seasoned crawfish alongside the prepared slaw.
