EGG AND WHITE BEAN SALAD

A creamy, protein-packed twist on classic egg salad—white beans add richness, fiber, and a little earthy flavor for the perfect sandwich filler or dip.

Ingredients
  

  • 4 Whole eggs
  • ½ cup mashed white beans
  • 2 tablespoons mayonnaise
  • 3 tablespoons relish
  • 1 minced celery rib
  • 1 tablespoon Dijon mustard
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ teaspoon paprika

Method
 

  1. Place eggs in a pan and cover with cold water. Bring to a boil, then immediately remove from heat. Cover and let sit for 12 minutes.
  2. Once cooled, peel the eggs.
  3. Lightly mash the white beans to your preferred consistency (smooth or rustic).
  4. In a bowl, combine the mashed white beans with mayonnaise, mustard, salt, and pepper.
  5. Add the peeled eggs, paprika, minced celery, and relish to the mixture.
  6. Re-season to taste and serve.
