Egg in a Hole Pesto Bagel

A fun breakfast upgrade with a runny egg baked into a toasted bagel, topped with fresh pesto and juicy tomatoes. Simple, fresh, and satisfying.

Ingredients
  

  • 1 everything bagel halved
  • 2 eggs
  • 2 tbsp basil spinach pesto
  • 4 slices tomato
  • Butter for skillet

Method
 

  1. Cut larger hole in bagel halves if needed.
  2. Melt butter in skillet over medium heat.
  3. Place bagel halves cut-side down, crack egg into hole.
  4. Cover and cook until whites are set, yolk to preference.
  5. Spread pesto over bagel, top with tomato slices, and serve.
