Method
- Cook orzo in salted boiling water according to package instructions. Reserve ¼ cup of the pasta water.
- Preheat oven to 365°F (180°C).
- Spray muffin tins with non-stick cooking spray.
- In a large bowl, whisk together the eggs, black pepper, grated Parmesan, shredded Parmesan, and the reserved pasta water.
- Stir in the cooked orzo.
- Pour approximately ⅓ cup of the mixture into each prepared muffin tin.
- Bake for 20-25 minutes, or until set and lightly golden.
