Pineapple Lemon Jam

A quick, bright jam that pairs tangy lemon with juicy pineapple for a sweet-tart spread that lifts any roasted turkey or rivals any cranberry jelly.

Ingredients
  

  • 1 cup canned pineapple
  • 1 seeded and sliced lemon
  • ½ cup water
  • Sugar optional, to taste

Method
 

  1. In a saucepan, combine the pineapple, lemon, and water.
  2. Bring the mixture to a boil.
  3. Reduce heat and simmer until the water has evaporated and the mixture thickens.
  4. Add sugar, if desired, to taste.
