Ribboned Carrot Salad

A fresh, ribboned carrot salad with parmesan, basil, and toasted walnuts .Bright, crisp, and the perfect side for rich entrées.

Ingredients
  

  • 2 large carrots peeled into ribbons
  • ¼ cup chopped walnuts
  • 3 basil leaves torn
  • 2 tablespoons grated Parmesan cheese
  • Walnut Vinaigrette amount to taste

Method
 

  1. Using a potato peeler, create thin ribbons from the carrots.
  2. In a bowl, lightly toss the carrot ribbons with the walnut vinaigrette.
  3. Arrange the dressed carrot ribbons around the interior of a serving bowl.
  4. Top with the chopped walnuts, grated Parmesan, and torn basil leaves.
  5. Drizzle with additional walnut vinaigrette, if desired.
