Small Batch French Onion Soup

Rich, caramelized onions and toasted bread under a molten blanket of cheese — French onion soup made just right for two. Cozy, golden, and perfect when you want comfort without leftovers.

Ingredients
  

  • 4 yellow onions thinly sliced
  • 4 cups beef broth
  • 1 Tbsp salt
  • 1 tsp mustard powder
  • 2 Tbsp butter
  • 1 Tbsp thyme
  • 1/4 cup white wine
  • 2 bay leaves
  • ¼ cup flour
  • 2 tsp black pepper
  • 3 cups Swiss/Gruyère blend shredded
  • 6 slices French bread

Method
 

  1. Melt butter, add onions, and cook low and slow until deeply caramelized for about 30 minutes.
  2. Stir in flour, mustard powder, salt, pepper, and thyme.
  3. Gradually add broth, bay leaves, white wine, salt, and pepper; simmer 15–20 minutes.
  4. Ladle into bowls, top with bread and cheese, then broil until bubbly and golden.
