Smoked Ribs & Green Onion Gremalata

Applewood smoked ribs topped with a fresh green onion, garlic, grapefruit and parsley gremolata.

Ingredients
  

  • 2 Slabs Ribs
  • Salt
  • Black Pepper
Green Onion Gremolata
  • 1 Bunch Green Onions
  • 1 Bunch Flat Leaf Parsley
  • 6 Cloves Garlic
  • 1/2 Grapefruit juiced
  • 1 Tb Crushed Red Pepper Flakes
  • Salt
  • Pepper
  • 1 tsp White Sugar

Equipment

  • BBQ Smoker
  • Food Processor

Method
 

  1. Season the ribs generously with salt and pepper.
  2. Place the ribs in the smoker at 225F for 5 Hours
  3. Make gremolata by adding all the ingredients listed in the food processor. Pulse everything to a chunk spread.
  4. Adjust the seasoning in the gremolata.
  5. Slice the ribs and top generously with the gremolata.
