3 Pepper Meatloaf is a comforting, flavorful twist on a classic, incorporating three types of peppers into a moist, hearty ground beef loaf.

Ingredients
  

  • 2.5 pounds ground beef
  • 2 large eggs
  • 0.5 bell pepper finely diced
  • 0.5 poblano pepper finely diced
  • 1 jalapeño finely diced
  • 2 corn tortillas finely minced
  • 0.5 bunch fresh cilantro chopped
  • 3 cloves garlic minced
  • 2 teaspoons black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon salt

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the ground beef, eggs, minced corn tortillas, bell pepper, poblano pepper, jalapeño, cilantro, minced garlic, black pepper, garlic powder, and salt. Mix thoroughly until all ingredients are well incorporated.
  3. Shape the mixture into a loaf and place it in a baking pan. If desired, wrap the edges of the pan with aluminum foil to prevent over-browning.
  4. Bake until the internal temperature of the meatloaf reaches 160°F (71°C).
  5. Remove from the oven and let the meatloaf rest for a few minutes before slicing and serving.
