White Bean Vinaigrette

Ingredients
  

  • ½ cup cooked white beans
  • 2 tablespoons bean cooking liquid
  • 1 clove garlic minced
  • 2 teaspoons salt
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon oregano
  • Juice and zest of 1 lemon
  • ½ cup olive oil

Method
 

  1. In a bowl, mash the white beans with the minced garlic, salt, and oregano. Stir in the bean cooking liquid until well combined.
  2. Whisk in the lemon juice, followed by the olive oil.
  3. Adjust salt to taste.
