Ingredients

  • 3 cups rolled oats
  • ½ cup almonds
  • ½ cup coconut flakes
  • 4 tablespoons unsalted butter
  • 4 tablespoons coconut oil
  • cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt

Method

  1. Brown the butter: Place the butter into a cold saucepan and heat over medium heat. Swirl the pan occasionally as the butter begins to brown and deepen in color, about 10 minutes. Remove from heat and add the coconut oil, stirring until melted.
  2. Combine dry ingredients: In a large bowl, combine the oats, almonds, and coconut flakes. Sprinkle with salt and cinnamon, then toss to combine.
  3. Mix wet ingredients: Add the honey and vanilla extract to the pan with the cooling brown butter and coconut oil mixture.
  4. Combine and bake: Pour the wet ingredients from the pan over the oat mixture and toss until thoroughly combined. Press the granola evenly onto a baking sheet lined with parchment paper or foil.
  5. Bake: Bake at 325°F (160°C) for 20-25 minutes, or until the oats are fragrant and the granola turns golden brown.
