Servings: 2

Ingredients

  • 2 large tortillas
  • 1 egg
  • 1 tablespoon sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • Cream Cheese & Berry Stuffing
  • 8 ounces cream cheese softened
  • 1/2 cup fresh cherries pitted and stemmed
  • 6 strawberries sliced
  • 1 tablespoon powdered sugar
  • 1/2 teaspoon vanilla extract

Equipment

  • Mixing bowl
  • Whisk
  • Knife
  • Cutting Board
  • Skillet
  • Spatula

Method

  1. Prepare the Berry Filling: Combine the pitted cherries and sliced strawberries with the vanilla extract and powdered sugar. Set the berry mixture aside to rest while you prepare the tortillas
  2. Whisk the Coating & Soak: Whisk together the egg, sugar, milk, and vanilla extract until fully combined. Dip the tortillas into the egg mixture, pressing down gently to coat both sides. Flip them over and let them soak for five minutes to absorb the mixture.
  3. Cook the Tortillas: Melt the butter in a skillet over medium-low heat. Place the soaked tortillas in the skillet and cook for approximately three minutes on each side, until puffed, golden brown, and fully cooked. Transfer them from the pan and allow them to cool until comfortable to handle.
  4. Assemble and Serve: Spread a generous layer of softened cream cheese across each tortilla. Top with a generous spoonful of the prepared berry filling, fold the tortillas, slice into portions, and enjoy.
