Oat & Cocoa Nib Thin and Crispy Cookies

Ingredients
  

  • 1 cup oats
  • 1/3 cup slivered almonds
  • 1/3 cup white sugar
  • 1 egg white
  • 1 Tbsp vanilla extract
  • 3 Tbsp butter melted
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 1 Tbsp cocoa nibs

Method
 

  1. Preheat oven to 300°F and spray a baking sheet.
  2. Pulse oats, almonds, sugar, salt, baking soda, and cocoa nibs in a food processor 5 times until coarse.
  3. Combine butter, vanilla, and egg white; add to oats in processor and mix until sticky.
  4. Scoop tablespoons of dough onto sheet, flatten with fingers.
  5. Bake 20–25 minutes until golden and crisp.
