Smoked Guacamole

This smoked guacamole takes classic creamy guacamole and gives it a subtle mesquite flavor. Whole avocados are gently smoked until tender, then mashed with fresh lime, garlic, cilantro, cayenne, olive oil, and sour cream for a cool, creamy dip with a smoky finish.

Ingredients

  • 3 avocados
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper
  • 2 tablespoons olive oil
  • 2 tablespoons sour cream
  • 1 lime juiced
  • 1 tablespoon cilantro
  • 1 garlic clove minced

Equipment

  • Mesquite wood
  • Smoker
  • Knife
  • Cutting Board
  • Small bowl
  • Fork or avocado masher
  • Foil
  • Measuring spoons

Method

  1. Remove any stickers from the avocados. Using a knife, carefully make small stabs into each end of the avocado, about 4 to 6 pokes per avocado. This allows the smoke to gently penetrate the skin.
  2. Prepare the smoker with mesquite wood using your preferred method. Place the whole avocados in the top of the smoker once it reaches 225°F . Smoke for about 1 hour and 15 minutes, or until the avocados are soft but not mushy.
  3. Remove the avocados from the smoker and wrap them individually in foil. Allow them to cool for about 30 minutes, or until they are comfortable enough to handle.
  4. Mince the garlic into a very fine paste.
  5. Cut the cooled avocados in half and remove the seeds. Scoop the avocado flesh into a bowl.
  6. Add the olive oil, lime juice, garlic, salt, cilantro, cayenne pepper, and sour cream. Stir until combined, leaving the guacamole as chunky or smooth as desired.
  7. Taste and adjust the salt, lime, or cayenne as needed. Chill until ready to serve and enjoy cold.
