- Remove any stickers from the avocados. Using a knife, carefully make small stabs into each end of the avocado, about 4 to 6 pokes per avocado. This allows the smoke to gently penetrate the skin.
- Prepare the smoker with mesquite wood using your preferred method. Place the whole avocados in the top of the smoker once it reaches 225°F . Smoke for about 1 hour and 15 minutes, or until the avocados are soft but not mushy.
- Remove the avocados from the smoker and wrap them individually in foil. Allow them to cool for about 30 minutes, or until they are comfortable enough to handle.
- Mince the garlic into a very fine paste.
- Cut the cooled avocados in half and remove the seeds. Scoop the avocado flesh into a bowl.
- Add the olive oil, lime juice, garlic, salt, cilantro, cayenne pepper, and sour cream. Stir until combined, leaving the guacamole as chunky or smooth as desired.
