Ingredients
  

  • 1 medium sweet potato roasted until soft
  • 1 tbsp miso paste
  • 1 tbsp stone ground mustard
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tbsp date syrup
  • Water as needed to thin

Method
 

  1. Roast sweet potato until fork-tender, then let cool slightly.
  2. In a blender, add sweet potato, miso, mustard, vinegar, olive oil, and date syrup.
  3. Blend until smooth, adding water 1 tbsp at a time until desired consistency.
