INGREDIENTS

  • 1 block firm tofu, 1 inch slices
  • 1/4 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 teaspoons cayenne pepper
  • 1tsp Salt
  • 2tsp black pepper
  • 4 bolillo bread, toasted
  • 1 jalapeño pepper, sliced
  • 1 cucumber, sliced
  • 1/4 cup chopped kale
  • 2 carrots, shaved
  • 4 crispy pickled okra, halved

INSTRUCTIONS

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a small bowl, combine the smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  • Sprinkle the tofu with the BBQ seasoning mixture.
  • Place the tofu on a baking sheet and bake for 25-30 minutes, or until golden brown and crispy. Top with barbecue sauce and cook for the last 10 minutes.
  • While the tofu is baking, assemble the sandwiches.
  • Lightly toast the bread and slice open.
  • In the bun add in the kale, cucumbers and jalapenos, Top with tofu and extra barbecue sauce along with pickled okra.
