Prepping the chicken

when grilling it’s best to remove all fat excess fat from the chicken. removing the fat does multiple things. first it allows the marinade to penetrate the meat and second you have better grill marks with the fat removed. since the fat tends to stick.

Marinating

grilling adds a ton of flavor to the meat. so to get the flavors to stand out you want to marinate the meat so that the marinade can work it’s way all the way to the bone. you also want to baste with the separate glaze to build a stick layer of sauce. do not baste the cooked chicken with the liquid from the marinade.

Cooking

when cooking your chicken make sure your coals are properly smoldered so that you’re not cooking directly over the flame. place chicken thick side down or bone side up. you want to wait till the chicken is easy to flip (usually when it’s cooked about half way up the side of the chicken) it’s ready to flip. If there isn’t much give, allow the chicken to cook a little longer till it releases naturally. flip the chicken then cook on the other side. baste the chicken only once the chicken is flipped to be finished cooking.

Serving

when ready to serve add a quick squeeze of lime over the chicken followed by green onions, basil mint and cilantro for some added freshness.

Grilled Sweet Chili Chicken Thighs

INGREDIENTS

  • 3lb Chicken thighs, skin removed
  • MARINADE
  • 2Tb Vegetable Oil
  • 1/2c Soy sauce
  • 1/2c Apple Juice
  • 2tsp Ginger, grated
  • 5 Garlic cloves
  • 1/4c Sriracha
  • 1 Green Onion
  • 3 sprigs mint and basil
  • 1/4 bunch Cilantro.
  • SWEET CHILI GLAZE
  • 1bottle Chili Sauce
  • 2tsp Garlic Powder
  • 2Tb Sriracha
  • 1 Lime . Juiced and zested
  • GARNISH
  • Cilantro
  • Mint
  • Basil
  • Lime

INSTRUCTIONS

  • Add all the ingredients listed under marinade into a blender. Blend on low to high till smooth.
  • Pour the marinade over the chicken. Toss to make sure it’s properly coated. Let sit for 4 hours to overnight.
  • Once the grill is ready and the coals are prepared. Remove the chicken from the marinade. ( Do not reuse the marinade )
  • Place bone side up on to the heated grill.
  • Prepare the glaze by combing all the ingredients listed together.
  • Cook the chicken for 7-9 minutes . Once the chicken easily pulls from the grill flip the chicken to the over side and cook for 5- 8 more minutes. Start basting only after flipping the chicken. Add three to four layer of glaze. Cover and allow the glaze to adhere to the chicken and get sticky.
