Chicken thighs are a great choice when grilling over open coal. Chicken thighs retain a lot of flavor and remain juicy when cooked for an extended period of time.
Sweet chili sauce is generally red chilis boiled down with a vinegar and spices with sugar and honey to act as a thickener. Save time by buying your favorite brand and adding a few additions to brighten it up.
Lime brings out the sweetness in the chili sauce, the heat in the peppers and balances out the saltiness in the soy sauce. Everything plays its part to make this sweet and spicy sauce.
Blending up fresh greens like onions, cilantro, mint, garlic and basil add amazing freshness to the dish but also permeates the meat all the way to the bone. Follow up with fresh greens laid over the top of the cooked chicken to bring out the flavors in the marinade.
when grilling it’s best to remove all fat excess fat from the chicken. removing the fat does multiple things. first it allows the marinade to penetrate the meat and second you have better grill marks with the fat removed. since the fat tends to stick.
grilling adds a ton of flavor to the meat. so to get the flavors to stand out you want to marinate the meat so that the marinade can work it’s way all the way to the bone. you also want to baste with the separate glaze to build a stick layer of sauce. do not baste the cooked chicken with the liquid from the marinade.
when cooking your chicken make sure your coals are properly smoldered so that you’re not cooking directly over the flame. place chicken thick side down or bone side up. you want to wait till the chicken is easy to flip (usually when it’s cooked about half way up the side of the chicken) it’s ready to flip. If there isn’t much give, allow the chicken to cook a little longer till it releases naturally. flip the chicken then cook on the other side. baste the chicken only once the chicken is flipped to be finished cooking.
when ready to serve add a quick squeeze of lime over the chicken followed by green onions, basil mint and cilantro for some added freshness.
