INGREDIENTS

  • Ingredients
  • 1 cup Jasmine rice
  • 1.5 cups water
  • 2-3 lbs Large deveined Shrimp
  • 1 tsp Oregano
  • 1 tsp dill
  • 2 garlic cloves, minced
  • 1 tsp Olive oil
  • 2 tsp crushed red pepper flakes
  • 1 tsp Salt
  • 1 Lemon
  • 6 Brussel sprouts, grated
  • 1 Yellow beet, julienned
  • Dressing
  • 2 Tbsp Mayo
  • 2 Tbsp Red wine vinegar
  • 1 tsp whole grain mustard
  • Salt and pepper
  • Oregano, fresh minced

INSTRUCTIONS

  • Cook the Jasmine Rice:
  • Rinse the jasmine rice until the water runs clear.
  • In a medium saucepan, combine the rinsed rice with 1.5 cups of water.
  • Bring to a boil, then cover and reduce heat to low.
  • Simmer for 15 minutes, or until all the water is absorbed.
  • Fluff the rice with a fork and set aside.
  • Prepare the Slaw:
  • Peel and grate the Brussel sprouts.
  • Peel and julienne the yellow beet.
  • In a large bowl, combine the grated Brussel sprouts and julienned yellow beet.
  • Poach the Shrimp:
  • Bring a large pot of salted water to a simmer.
  • Add the deveined shrimp and poach for 2-3 minutes, or until just cooked through (they will turn pink and opaque).
