This Is one of those dishes when it get cold out it just calls your name. This soup is the perfect balance of being creamy and hearty while also not being too heavy. Adding the smokiest sausage you can find just takes this dish to a whole other level.
2 Chicken breast
1.5 c Wild Rice
1 c heavy cream
8c vegetable stock
2 stacks celery, chopped
1 yellow onion, diced
2 cloves garlic, minced
3 carrot sticks, chopped
Salt and pepper
Cube Chicken coat generously with salt and pepper toss
Heat pan add in enough oil to coat the bottom. Brown chicken in multiple batches till chicken is golden on all sides.
Add in celery, carrots ,onions and cook for 4 minutes till a little brown
Add in garlic, sausage, and wild rice
Cover with vegetable stock
Toss in bay leaves
Bring to boil
Reduce to simmer for 90 minutes
