Ingredients
  

  • 1.5 lbs portioned salmon side
  • 10 tortillas corn
  • 1 grated head of broccoli including the stem
  • 1 medium carrot grated
  • 2 tbsp butter
  • 2 tbsp cooking oil
  • 2 tsp sea salt and 2 tsp black pepper
  • Peach mojito vinaigrette 2 tsp for initial use plus extra for topping
  • For serving: fresh cilantro and lime wedges

  • 1/2 cup defrosted peaches
  • 1/4 cup olive oil and 1/4 cup red wine vinegar
  • 2 tbsp honey
  • 2 mint sprigs
