Carne Picada is one of my super quick go-to staples. its something to always have in the freezer to just defrost because cooking it literally takes a few minutes. Carne Picada is ground or minced meat. it’s a super thin shaved beef that take flavor really well and quickly. You can either eat it on a tortilla or nachos as is or you can jazz it up a little with some pico, guacamole, sour cream, lettuce, anything your heart desires.
Ingredients
1.5lb Carne Picada
1 small yellow onion thinly sliced
1 jalapeno seeded and thinly sliced
1/4tsp cumin
1tsp salt
1tsp cayenne
1tsp black pepper
1tsp garlic powder
Juice of one lime
1Tb canola oil
corn tortillas
1/4c diced tomatoes
1c shredded lettuce
1/4c diced red onion
sour cream
Directions
Put meat in a bowl
Add thinly shaved onions and jalapeno
Add lime juice and oil
Add in cumin, cayenne, black pepper, garlic powder, and salt.
Toss together let sit for 30 minutes to overnight.
In a cast iron pan heat to medium high
Sear off meat,onions and peppers in small batches together ( it took me about 3 small batches)
heat pan to medium high lightly coat with oil cook corn tortillas lightly one side
on cook side add 2Tb of meat to the tortilla and cook on both raw sides like a filled taco
fill with sour cream, lettuce, tomatoes, and onions
