INGREDIENTS

  • Chicken Fried Chicken:
  • 4 boneless, skinless chicken breasts, pounded thin
  • 2 teaspoon salt
  • 1Tb Garlic powder
  • 2 tsp Onion powder
  • 1 tsp Oregano
  • 1 tsp thyme
  • 2 tsp teaspoon black pepper
  • 1/2 cup hot sauce
  • 1/2 cup buttermilk
  • 2 Eggs
  • 3c Flour (2 tsp garlic powder, 1 tsp paprika,2 tsp black pepper, 1 tsp salt)
  • 3 cup vegetable oil, for frying
  • Green Onion, diced- garnish
  • Black Pepper White Gravy
  • 3Tb Butter
  • 4Tb Flour
  • 1 tsp thyme
  • ½ tsp Cayenne
  • 1Tb Garlic Powder
  • 2 tsp Black Pepper
  • 1 tsp Onion Powder
  • 1c Half and half
  • Blue Cheese Mash:
  • 2 pounds Russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 4 ounces blue cheese, crumbled
  • 1/4 cup butter, softened
  • 4 Garlic cloves, minced
  • Salt and pepper to taste

INSTRUCTIONS

  • Chicken Fried Chicken:
  • Prep the chicken, once prepped season with the spices listed, combine the egg, hot sauce and buttermilk, pour over the chicken and let sit for one hour overnight.
  • In a shallow dish, combine the flour with the seasonings listed.
  • Dredge the chicken breasts in the flour mixture, sit onto a wire rack to allow flour to form a skin.
  • Heat the oil in a large skillet over medium heat.
  • Fry the chicken breasts for 3-4 minutes per side, or until golden brown and cooked through.
  • Drain the chicken breasts on a clean wire rack. Serve with the gravy.
  • To make the gravy add butter and flour into a sauce pan. Once melted add in half and half stick to thicken.
  • Season with spices listed, allow to simmer for 5 minutes. Season with salt to taste and finish with butter.
  • Blue Cheese Mash:
  • Place the potatoes in a large pot of cold water and bring to a boil.
  • Reduce heat to medium-low and simmer for 15-20 minutes, or until the potatoes are tender.
  • Drain the potatoes and return them to the pot.
  • Add the milk, heavy cream, blue cheese, butter, salt, and pepper to the potatoes and mash until smooth.
  • Serve the Blue Cheese Mash with the Chicken Fried Chicken.
