Jalapeno Spinach Quiche

INGREDIENTS

  • 1 premade pie crust
  • 1 tablespoon olive oil
  • 1 tsp Vinegar ( White or ACV)
  • 2 chopped jalapenos
  • 12-ounce fresh baby spinach,(can use frozen just thaw and drain)
  • 1 cup half and half
  • 6 large eggs
  • 1/2 cup grated Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • 1 tsp Salt
  • 1 tsp Black Pepper, fresh cracked

INSTRUCTIONS

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a large skillet over medium heat. Add jalapenos and cook until softened, about 2 minutes. Add spinach and cook until wilted, about 1 minute. Add in a tsp of vinegar and cool.
  • In a large bowl, whisk together half and half, eggs, cheese, and cilantro. Add the spinach and jalapeno mixture and stir to combine. Let the mix sit for five minutes.
  • Place the pie crust into your preferred baking pan and lightly poke with a fork. Pour the quiche filling into the pie crust.
  • Bake in the preheated oven until the center is set and the top is golden brown, about 30-35 minutes.
  • Let cool for 10 minutes before serving.
