Broccoli and Cheese Stuffed Potato

So this one was fun. I just really like finding things to stuff into other things. I didn’t grow up on broccoli and cheese specifically around here broccoli and cheese casserole so I don’t feel obligated to keep it completely traditional. The potato and the cheesy broccoli worked sooooooo incredibly well together. The soft fluffy potato mixed with melted cheese creates this really wonderful light texture and the crunch from the broccoli will make this your next go to side!

Ingredients

  • 3 russet potatoes
  • 1 leek, diced
  • 1tsp minced garlic
  • 2 broccoli crowns
  • 1.5c shredded cheddar+ for topping
  • 3/4 c pub cheese or old English cheese
  • 4Tb butter
  • 1/2c half and half
  • salt
  • pepper

Directions

  • Poke holes into potatoes with a fork. Wrap each one individually in plastic wrap
  • Microwave each potato individually for 6 minutes potato should be fork tender
  • While letting potatoes cool a little. Heat pan over medium heat
  • Add in 2TB  butter, leeks and broccoli sauté for 5 minutes. Season with salt and pepper add in garlic and remove from heat
  • Remove potato from plastic wrap. Split potato in half and scoop inside of the potato leaving skin in tack. Make sure not to scoop too much.
  • Add potato filling to leek and broccoli mixture
  • Add in 2TB butter, half and half , pub cheese and shredded cheese
  • Mash with a fork till combined season with salt and pepper
  • Before adding filling back into the potato season inside with salt and pepper
  • Fill with potato filling , sprinkle on as much shredded cheese as you want 
  • Bake at 400 for 10 minutes
