Crispy edamame tossed with shaved carrots, segmented grapefruit, green onions, and celery seasoned with a simple rice wine soy vinaigrette.
This quick and easy salad was the perfect palette cleanser to lighten up any menu. I want to start off by mentioning how easy salads are in general but this salad was way easier. I’m not much of a salad dressing person much like I don’t like sweeteners in my smoothies or sugar in my coffee. I tend to take things plain and enjoy things for themselves. I’m not saying the occasional boost of flavor isn’t welcomed it just is unnecessary to me. Unfortunately not everyone around me agrees. So when I come up with recipe that plays off the natural flavors of one another I am a happy camper. This citrus salad is just that. I took sturdy vegetables like edamame, celery, and carrots and used the natural juice of the grapefruit as the main flavor amplifier. I added some liquid salt like soy sauce and a dash of the super flavor enhancing sesame oil and called it a day. This salad I threw together in under 5 minutes it was flavored packed and really could have stood on its own. Check out my tips and tricks below for the best edamame and grapefruit salad. TIPS & TRICKS FOR THE BEST EDAMAME AND GRAPEFRUIT SALAD:
blanch and shock: lets not over think this already easy recipe. keep it simple with a quick blanch and shock. boil salt water, drop the edamame for one minute till it brightens in color. then have an ice bath ready to add the edamame in to keep it colorful, bright and crisp.
anything goes: for this recipe i really just cleaned out the crisper for it. use an of those hard veggies that you need to use up. treat this salad similar to a coleslaw. any vegetable goes and the longer it sits since it using harder vegetables the better it will taste.
try the grapefruit: the grapefruit is the star here. so it matters. try your grapefruit out incase it needs some sweetness or if its too sweet it might need some additional heat to back it up. the grapefruit segment and the addition of soy will cause the grapefruit to break down over time and will enhance the seasoning so try the grapefruit to make sure you don’t need to balance it out.

BLANCH AND SHOCK: In a stock pot add in 4 cups of water with a generous amount of salt similar to pasta water. Bring the pot to a boil then add in edamame for one minute. The edamame will brighten in color. Have a ice bath ready which is just ice and water. Immediately place cooked edamame in the ice bath to stop the cooking.
COMBINE: Once the edamame is cooked. toss all the ingredients together. Let sit or serve immediately.
