Crispy buttermilk Belgium waffles topped with sticky blueberry compote and mashed blueberry butter.
WHAT’S GOING ON HERE:
Fresh Blueberries: Fresh blueberries are essential for any jam, jelly, or compote. fresh blueberries contain all the juice and sugar to make for a nice glaze. the addition of sugar helps tighten up the water thickening it making it a syrup.
Dried Blueberries: Dried blueberries are great. they have concentrated dried blueberry bombs that have numerous uses from salad to granola. You can rehydrate dried blueberries with any liquid you want for this recipe I use buttermilk to help hydrate the berry.
Waffle batter: waffle batter is simply a few cups of flour, a pinch of salt, and sugar. wet ingredients include buttermilk, eggs, and fat.
Buttermilk: buttermilk brings the tang which is added flavor. I also use buttermilk to rehydrate the blueberries.
TIPS & TRICKS FOR THE BEST BLUEBERRY LOVERS WAFFLES
soak the dried berries: soak the dried berries before adding them into the batter. the dried blueberries can be kinda hard and chewy which can throw off the texture of the waffles.
non-stick: spray the waffle iron with non-stick spray prior to filling the waffle iron. if you’re using butter or oil use a rubber non-stick brush to make sure to get all the way into the crevices.
sugar and boiling: boiling the blueberries and them breaking down is how you release the pectin. the sugar adds body to the water resulting in a beautiful purple syrup from the crushing of the blueberries.
