Buttermilk Biscuits + Ham & Sausage Red Eye Gravy

INGREDIENTS

  • 1 can Buttermilk Biscuits
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1tsp Chicken Bouillon powder
  • 1tsp Thyme
  • ½ Yellow Onion, minced
  • ½ pound Pork Sausage
  • ½ pound Honey Ham, thick sliced
  • 2-3 cups Half and Half
  • ¼ cup Black Coffee
  • 1-2 teaspoons Black Pepper, coarse ground
  • Sea Salt, to taste
  • 6 Eggs, one per biscuit

INSTRUCTIONS

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large skillet, melt the butter over medium heat. Add in the onions, bouillon and thyme and sauté for five minutes just to lightly color. Add in the flour and cook, stirring constantly, for 1 minute.
  • Add the pork sausage and cook, breaking it up into small pieces, until browned, about 5 minutes.
  • Add the honey ham and cook until heated through, about 2 minutes.
  • Stir in the half and half and black coffee. Bring to a simmer and cook for 5 minutes, or until the mixture has thickened. Season with black pepper and salt to taste.
  • Simmer to develop the flavor then reduce the heat till ready to serve.
  • Butter a baking sheet, add in biscuits then bake according to package instructions. ONce golden brown it’s time to serve!
  • In a small pan, cook eggs as desired. Season lightly with salt and pepper.
  • Split a warm biscuit in half. Add in an egg then top with the other half of the biscuit.
  • Top with a generous ladle of gravy, garnish with some sliced jalapenos for some heat and enjoy!
