the pancakes can be served warmed or cooled. when removing from the oven allow to cool slightly. scoop a spoonful of pancake from the middle to make a bed for the topping. place the sweet cream at the bottom, followed by the whipped cream and fruit.

This recipe can be taken in a lot of different directions. If you prefer a glaze like strawberry short cake toss your cherries and strawberries in sugar and let a syrup form.

INGREDIENTS

  • FOR THE PANCAKES:
  • 2c Pancake mix
  • 1 1/3cMilk
  • 1tsp Vanilla
  • SWEET CREAM
  • 8oz Cream cheese, soften
  • 4oz Salted Butter, soften
  • 3/4c-1c Powdered Sugar
  • 1/2tsp Vanilla
  • TOPPINGS
  • Whipped Cream
  • Fresh Strawberries, halved
  • Fresh Cherries, halved

INSTRUCTIONS

  • Whip together all the ingredients listed under sweet cream butter. Once completely combined move it to the side.
  • Follow the instructions for making the pancake batter according to the package.
  • Butter or spray 4-5 Ramekins.
  • Fill 3/4 of the way. Do not fill to the edge or the batter will spill over.
  • Bake at 350F 20-23 minutes
  • Once the top no longer wiggles and springs back to the touch it’s ready to serve.
  • Remove the cakes from the oven.
  • Allow to cool for 2 -3 minutes.
  • Scoop a small hole and place the sweet cream in.
  • Top with whipped cream, and fresh berries.
  • Serve and enjoy!
