Baked pancakes are simple, they are pancakes poured into buttered ramekins then baked. Use your favorite pancake recipe for this dish.
Sweet cream is an all In one breakfast butter it’s perfect for everything it’s simply whipped cream cheese, powdered sugar and butter together. Everyone’s favorite all rolled into one.
Whipped cream adds creaminess to this dish but also a rich vanilla flavor. Whipped cream is a great addition to pancakes and berries.
Use whatever berries you prefer with pancakes for this recipe I feature pitted cherries and strawberries. The sweet and tangy fruit cuts the richness of the sweet cream and pancake.
use a mix to save time. prepare your pancakes however you would for a griddle. just place it into a ramekin. bake and forget it till it’s fluffy like a soufflé.
prep this recipe like you would for making regular pancakes. all you need to do is butter or spray the ramekins and pop them into a preheated oven. The oven takes care of the rest for you. don’t fill the ramekins too high or like a cupcake it’ll spill over.
the sweet cream is simple. take softened cream cheese, butter and powdered sugar whip it together and serve. use this sweet cream dip for your next fruit platter, just thin out the sweet cream with a touch of milk.
the pancakes can be served warmed or cooled. when removing from the oven allow to cool slightly. scoop a spoonful of pancake from the middle to make a bed for the topping. place the sweet cream at the bottom, followed by the whipped cream and fruit.
This recipe can be taken in a lot of different directions. If you prefer a glaze like strawberry short cake toss your cherries and strawberries in sugar and let a syrup form.
Keep it simple with butter, syrup and powdered sugar.
Add melted chocolate, white chocolate or even crunchy chips.
