Quick Jalapeño Garlic Salsa Fresca

A bold, smoky salsa that comes together in minutes. Blistered jalapeños and fresh garlic get pulsed with cilantro for a spicy, fresh topping that works on just about anything.

Ingredients
  

  • 3 jalapeños
  • 5 cloves garlic skin on
  • 1 Tbsp olive oil
  • 1 tsp salt
  • ¼ bunch cilantro minced
  • ½ lime juiced

Method
 

  1. Drizzle jalapeños and garlic with olive oil.
  2. Place in a 400-degree oven for 10 minutes.
  3. Transfer to a broiler for a few minutes until the skin begins to brown and bubble (it doesn’t need to blacken).
  4. Once softened, remove the jalapeños and garlic from the oven.
  5. Remove the stems from the jalapeños and place the peppers in a mixing bowl.
  6. Remove the garlic from its peel and add it to the bowl with the jalapeños.
  7. Add the salt and mash the jalapeños and garlic with a fork.
  8. Stir in the lime juice and season with additional salt to taste.
