Now I’m someone who isn’t a sweet potato person , although growing up I’ve only ever had them prepared in sweet forms .That being said I never realized how versatile sweet potatoes are or really how good. So you might see a spike in sweet potato recipes to come. I’d even go so far to say this is the recipe that changed my mind. I think because it’s so simple comforting and warm. The sweet potato is creamy and buttery. Then its topped with melted salty Swiss cheese and ham then capped off with some green onions for crunch. I think this one you just have to try!
2 Sweet potatoes
1 Tb butter
2 slices of ham diced
2 slices of thick Swiss cheese
1 green onion diced
1Tb olive oil
One at a time microwave each sweet potato for 4 minutes.
Preheat oven to 400.
Once the sweet potatoes are out of the microwave transfer to an oven safe baking sheet
Coat sweet potatoes with a little olive oil salt and pepper bake for 7 minutes.
Split sweet potato down the middle.
Using a fork fluff inside of sweet potato and season with butter, salt and pepper.
Put 1/4th of ham in the sweet potato top with Swiss cheese followed by the rest of the ham.
Broil for 3 minutes till cheese is melted. Top with green onions.
