Serrano Peaches

Sweet and spicy peaches simmered with whole serrano peppers, garlic and sweet maple syrup.

Okay these were an idea I had in my head that surprisingly turned out way better than I expected. I was making a smoked chicken bowl and I decided I needed a sweet component that wasn’t sweet potatoes, candied yams, or apples. Peaches came to mind. I figured I would change them up and balance the syrup they came in since its not the season for fresh peaches with super spicy peppers! The spice from the peppers and the cinnamon absolutely made this dish. I definitely plan on making this dish again. I love how it thickened once it got to room temperature. TIPS & TRICKS FOR THE BEST SERRANO PEACHES:

remove the seeds: this dish has potential to be incredibly spicy. i left such a little amount of seeds in and they really packed in the heat. so if you want a milder dish remove the seeds and the ribs before adding them in or use a milder pepper all together.

never too much cinnamon: this dish is cinnamon packed the cinnamon loved the peaches and the serrano and i put a ton in it! i actually served these peaches with the cinnamon mill next to it so everyone could add more fresh cinnamon to the top like fresh cracked pepper.

leave the maple: you may be a maple syrup hater like me but in this dish i’d say keep it in. the maple syrup wasn’t noticeable as the sweetener in this dish. but it did add a lot of flavor. that being said use the highest quality available to you. if you have commercial maple syrup that may be overly sweet and maple flavored so add less maple syrup or substitute with brown sugar.

canned peaches: peaches are best in season but you may want this dish year round. canned peaches work just fine get them in light syrup and drain them when you use them. canned peaches aren’t soft and fragile they can definitely stand up to cooking so use them in a can when you need them!

INGREDIENTS:

  • 2 Cans of peaches, drained
  • 1 Serrano Pepper, sliced
  • 2Tb Butter
  • 1/4c Maple Syrup
  • 1tsp Cinnamon
  • 1/4tsp Salt
  • 4 Garlic Cloves, minced

DIRECTIONS:

  • SAUTE VEG: In a sauté pan melt butter, add in serrano peppers and garlic. Cook for about 5 minutes till everything starts to soften.
  • ADD PEACHES: Add in peaches then bring them to a simmer.
  • SEASON: Add in maple syrup, cinnamon, and salt. Simmer until a syrup starts to form. Continue to simmer for about 10 minutes. Then remove from heat. Serve hot or cold.
