Baked oatmeal is really a breakfast treat! it’s so good I’ve eaten it for dessert and it really hit the spot. My baked oatmeal is a little different. I used different dairies to create a thick custard. When warmed up makes the oats super creamy. Vanilla and cinnamon because what are oats without them? Blueberries and walnuts because why not. TIPS & TRICKS FOR  THE BEST BAKED BLUEBERRY OATMEAL

do it ahead: this recipe can be made ahead of time. Complete all the steps except for baking the oatmeal. Cover and refrigerate overnight so that you can just pop it right into the oven.

storage: don’t worry if you have leftover oats. Cover the pan and serve them for dessert or breakfast. since the oats are baked the oatmeal holds together really well. eat the oatmeal within four days.

customize it: don’t have blueberries or walnuts? no worries, use whatever fruit you have on hand. dried fruit even works as a replacement. Use any nuts you enjoy the most. dark chocolate is used in this dish since the condensed milk is so sweet and it helps balance the dish out.  I’d recommend keeping the chocolate bitter, milk chocolate can be too sweet in this one.

INGREDIENTS

  • 1.5c Rolled Oats
  • Evaporated Milk
  • Sweet and Condensed Milk
  • 1Tb Vanilla Extract
  • 1/2tsp Salt
  • 2Tb Flax Seed, ground
  • 1/3c Blueberries, fresh
  • 1/3c Walnuts, crushed
  • 1/3c Dark ChocolateChips
  • 3Tb Brown Sugar
  • 2tsp Cinnamon
  • 1Tb Butter

INSTRUCTIONS

  • To make the granola combine all the ingredients expect the butter into a bowl.
  • Stir until the oats are completed coated in milk.
  • In a small baking pan rub the sides with butter.
  • Pour the oat mixture into the pan. Even everything out.
  • Bake at 350F For 25 minutes. Eat hot or cold!
